Quick and Easy Curry Puffs

I love a quick and easy recipe and this one ticks both those boxes, along with being a cheat recipe! I remember curry puffs were always a treat at family function. My aunt used to make them from scratch taking hours and a lot of labour. This is so much easier…. Your favorite left over curry, some puff pastry and no one will be any the wiser that a several hour operation has been reduced down to 30 minutes !!

Ingredients:

  • Cold Curry (leftovers)
  • Frozen Puff Pastry Sheets
  • 1 Egg

Method:
Preheat the oven to 200C. Lay out the puff pastry sheets to defrost. Cut them into quarters

Place a small teaspoon of cold curry into the centre of each square and wash two sides with the beaten egg.

Fold the unwashed corners onto the washed sides and roll up as in the picture below

Press down firmly with a fork to seal

Lay out on greaseproof baking paper

Wash well with egg wash.  This is going to give them a wonderful golden shine

Place into the hot oven and bake until golden

Roughly 15-20 minutes depending on the oven

Serve hot or warm, or even cold at a summer picnic.  DELICIOUS !!
