Garlic and Parmesan Roasted Cauliflower

I really love quick and easy recipes.  Recipes that people think took hours and slavish preparation, but in reality they are just a clever combination of flavours.  This recipe I first had in a restaurant in Savannah and I have taken it and tweaked it into the one I make today.  Enjoy it as much as everyone I make it for does.

Ingredients:

  • 1 head of cauliflower
  • 2 cloves of garlic (finely sliced)
  • Lemon zest from one lemon (optional)
  • 1/2 Cup Olive oil
  • Coarse salt and freshly ground black pepper
  • 1/2 cup Parmesan cheese (grated)

Method:

Preheat oven to 180c. Cut cauliflower into florets.

Lay in a single layer in a baking tray lined with greaseproof paper.

Drizzle with olive oil.

Toss in the garlic ( add the lemon zest also at this stage is desired)

Toss throughly to ensure they are evenly coated then add the garlic evenly over the top.

Sprinkle with salt and pepper.

Place in the hot oven.

Cook uncovered, for roughly 30 minutes, or until the top is lightly brown. Test with a fork.

Remove from oven and as an optional extra sprinkle generously with extra Parmesan cheese. Serve immediately.
