Spinach and Feta Burek
My best friend Linda taught me to make Burek from scratch a few years ago. While I may have lost the knack for making the pastry from scratch I still adore the taste and settle when I am in a hurry for using store bought filo pastry. This is always a crowd pleaser in my family. Enjoy !
500gm Hard Feta Cheese
500gm Frozen Spinach
125 gm butter (melted)
2 large eggs
1 Packet of Filo Pastry
1 cup parmesan cheese – grated
Olive Oil Spray
Pre-heat the oven to 180C and crumble the feta into small pieces using a fork.
Defrost the spinach draining any excess water and combine with the cheese.
Add the eggs and the parmesan to the mixture and season with Salt and Pepper. Lay out the pastry into a single layer.
Spray each sheet with the Olive oil spray and stack one upon the other.
Sprinkle with the spinach mixture.
Roll up using the dish cloth to assist or else the filo will break.
Lay into a heavy oven lay in a spiral shape starting from the outside in.
When completed pour over the melted butter and place into the oven.
Bake until golden. Serve and enjoy !!!
