Garlic and Herb Bread – SUPER EASY !!

I think this is a great way to utilise old bread and always a family favourite.  Here is a quick and easy recipe I use when I’m caught short and have unexpected guests or need to make a meal stretch a little further when too many people turn up.  Enjoy !!


Ingredients:
4 French Loaves (or day old bread)
4 Cloves Garlic
1/2 cup fresh herbs (Parsely & Oregano)
Olive Oil
125 gm Salted Butter (Room Temperature)


Method:
Pre-heat oven to 200 C
Slice bread which ever way you desire.


Peel Garlic and dice and roughly chop herbs.


Add a good dash of oil to a hot pan and add the garlic.


Sweat the garlic out and add the herbs.


Heat quickly for 1 minute and then remove from heat to cool.


Add the oil/garlic/herb mixture to the butter.


Thoroughly combine.


Butter the slices generously and replace into the correct loaf order.


Wrap in Aluminium Foil and place onto oven tray.


Bake in the oven for 20 minutes until the bread begins to turn golden.


Serve and ENJOY !!!
