Date Loaf

This is one of my favourite childhood recipes.  I remember my mother making this when we had visitors for afternoon tea and taking it along on family picnics served with lots of butter.  In this recipe the darker the suger you use the richer the flavour will be.


Ingredients:
Wet Ingredients –
1 cup – chopped dates
1 cup – brown sugar (darker the better)
2 oz butter
1 cup boiling Milk

Dry Ingredients-
1 3/4 cups S.R Flour
1 tspoon mixed spice
1 tspoon bi-carbonate soda


Method:
Pre-heat oven to 180c
Mix together the dry ingredients and set to one side.


Mix together wet ingredients and stir until the butter has fully melted.


Combine with the dry ingredients and stir through.


Grease a loaf tin and pour in the cake mixture.


Bake for 50-55 minutes until baked through.


Serve hot with butter . . . .  is brilliant hot, warm or cold.
