Banana, Walnut and Yoghurt Bread

Bananas are a great source of Potassium and Vitamins, so when combined with Walnuts (rich in Omega 3’s) they make a great alternative for afternoon tea from traditional sugar rich items.


Ingredients:
125gm softened butter
¾ cup brown sugar firmly packed
2 large eggs
1.5 cups self raising flour
1 t-spoon mixed spice
1 cup mashed ripe bananas
1 cup walnuts
½ cup greek yoghurt
¼ cup full cream milk

Method:
Pre-heat oven to 180c (350 F)
Grease 15cmx25cm loaf tin, lining the base with grease proof paper.
Place butter and sugar into the electric mixer and beat until light and fluffy.


Continue beating and add eggs one at a time until combined.


Mix in the bananas.


Transfer mixture to a large bowl.   Stir in the dry ingredients, walnuts, yoghurt and milk.  Do not over stir mixture.


Spread into tin and place into pre-heated oven.


Bake for roughly 50 minutes or until a skewer inserted comes out clean.


Allow to stand out of the oven in the tin for 5-10 minutes before turning out onto a wire rack to cool.
