Walnut and Espresso Muffins

I love coffee.  It’s no secret.  So when I can combine Espresso with something especially good for you like walnuts which are rich in Omega 3’s I will jump at the chance to feel less guilty about my espresso consumption.  The yoghurt in these helps to keep them moist.  Don’t over mix the batter or else they will be tough as boots. . . . .  yes I did learn from a few mistakes.  But where coffee is involved I will persevere and find a way.  LOVE THIS RECIPE !!!


Ingredients:
2 Eggs
1 Cup Greek Yoghurt
1/2 Cup Brown Sugar
1/2 Cup Vegetable Oil
1 Cup Walnuts
1/3 Cup Espresso
2 1/2 Cups Plain Flour
3 t-spoons Baking powder
1 t-spoon Cinnamon

Method:
Preheat the oven to 220c
Grease a 12 hole 1/2 cup muffin tray with cooking spray and line with muffin pans. Combine all the dry ingredients in a large bowl and stir.


Combine al the wet ingredients and blend together, excluding the coffee. Combine together and add the coffee once combined.


Spoon into the muffin pans.


For the topping combine 1 Table spoon of brown sugar with 1 tspoon of cinnamon and sprinkle over the top before baking.


Add additonal walnuts if desired to garnish.  Place into the oven and bake for between 25-30 mins until golden brown.


Serve warm with butter and excellent with hot coffee
