Raspberry and Pecan Friands – SUPER EASY

BEWARE – Cooking friands too long will make them dry, beating the egg whites will also make them lighter but in turn they will be dry as they require the moisture from the egg white.  I have learnt this lesson myself several times 🙂


Ingredients:
200gm Melted butte
5 Egg Whites
1 Cup Hazelnut Meal
1 Cup Plain Flour
1 Cup Castor Sugar
1/2 Cup Frozen Raspberries
1/2 Cup Pecan Nuts


Method:
Pre Heat the oven to 180c
Combine all ingredients together and mix well.






Grease friand tin well and divide between 12 moulds.


Bake for 15-20 minutes until golden on top.  Serve with Tea or Coffee and afternoon tea.
