I love lemon and this is a classic summer cake for my family. The aroma as the cake bakes fills the house with the sweet scent of lemon. Served warm with fresh cream it is incredible !!!
Preheat the oven to 170c
In a mixer cream the butter and sugar.
Add the mascarpone and the eggs and beat on high for 2 mins.
Slowly combine the flour into the mixture on a low speed.
Add the zest of 2 lemons and the juice of all 4 lemons and comine thoroughly.
Grease a large bunt pan with cooking pray and pour in cake batter.
Place into the oven to bake for 70-80 minutes or until a skewer inserted comes out clean from the mixture.
Serve with freshly whipped cream or a mixture of mascarpone, lemon and powdered sugar. Excellent with espresso coffee.
