Organic Basil and Parmesan Muffins

Ingredients:

2 Cups Self Raising Flour
2 Cups Parmesan Cheese – Grated
2 Eggs
2 cups Milk – Full Cream
1/4 Cup Fresh Basil – Coarsely Chopped
3 tspn Fresh Black Pepper

Method:
Turn the oven onto 200c ( F) and allow to pre-heat.
In a large bowl sift the 2 cups of flour and combine the cheese, freshly cracked black pepper and basil.

In the cup measure crack in one egg and top with milk.

Add to the dry ingredients and repeat with the remaining egg. Combine all ingredients thoroughly.

Grease a 12 muffin tray. Divide mixture evenly and place into the hot oven.

Bake for between 15-18 minutes until the muffins turn golden.

(Please note that should you substitute the Parmesan for a softer cheese such as cheddar the cooking time may increase due to the greature amount of moisture in the cheese )
